How do I OCR Scanned Documents?

Scanning itself provides just a scanned image, or a picture of a document. In many case we want to convert, or perform recognition, on the text within the image.  This is accomplished through the OCR, or Optical Charater Recognition process, converting image to text.  This process can be performed as the images are being scanned, or can be performed on a directory of scanned documents through an import process.  It all depends on the type of software, document capture or scanning,  you have in place.  In this BLOG, I will review some requirements, as well as provide some reviews on software to OCR scanned documents.
